A 2018 rosé made from a blend of Grenache, Cinsault, Viognier and Mourvèdre grapes from the historic Cabrières sub-appellation of the Languedoc-Roussillon appellation in Southern France. This wine was produced in the heart of the birthplace of rosé. Known for it's very pale, delicate rosés and this wine is an iconic representation of this style. These grapes where biodynamically farmed and hand harvested at sunrise to maintain the fresh acidity due to the cooler overnight temperatures. After fermentation in temperature controlled stainless steel tanks, this wine spends 6 months in new oak barrels on lees with regular lees stirring to add complexity and texture to the wine. Incredible care is taken to highlight the iconic terroir from the schist and limestone soils and the fresh vibrant fruit grown in this region. This wine has aromas of ripe apricot and white peach with floral notes of rose and a hint of spicy green pepper.
